Do you have any favourite breakfast dish? Avocado Toast with Poached egg is very high upp on my list, the only thing that might beat that is either Eggs Benedict or pancakes which I love. I did this tasty Avocado Toast with Poached egg a few days ago and topped it with some sesame seeds, black pepper and salt. I based the toast on a homebaked artisan bread, recipe on the bread will follow in the coming days.

- 2 slices artisan bread
- Pinch of salt and black pepper
- 1 ripe avocado
- 2 fresh eggs
- Sesame seeds
- Cream cheese
- Boil up some water with a drop of vinegar. When the water is boiling, remove from heat and create a whirlpool. Crack a fresh egg and pour it down slowly, close to the surface and in the center of the pot. The whirlpool will help the egg white to wrap around the egg. Let it be in the water for 3-4 minutes and gently remove from the pot with a help of a slotted spoon.
- Cut the avocado along the middle and twist so it divides into 2 slices. Remove the peel with a spoon and slice it.
- Toast your bred, add some cream cheese on it and add the avocado, poached egg and the sesame seeds and spices. Finish off with some fresh parsley and enjoy!
